1/2 gallon vegetable or canola oil
4 lbs chicken wings
3oz Ghost of the Mississippi
3 Tbs butter ( optional )
4 golden potatoes
Carrots and or celery
Salt
Heat oil to ( 300-325°F for fries first )
360°F
Wash wings and Pat dry with paper towel. In batches fry wings for 10-12 mins. Until internal temp is 165°F
Remove onto paper towels to drain
-Optional-
For less heat with your sauce, heat stove to med low. Add butter to a pan and melt. Add sauce, stir and let cook for 3 min. Take wings and add to a bowl and toss with sauce.
For fries -
Heat oil 300-325°F Wash potatoes and then cut long ways .25 of an inch. Rotate potatoes and cut long ways . 25 of an inch. Place sliced sticks in a bowl of cold water Gently stir around releasing starches. Drain and repeat until clear water. Layout on paper towel and pat dry.
In batches
Fry for 3-4 minutes until fries aren’t shiny. Lay out on paper towel and pat dry. Then let cool.
Raise heat to 360
In batches fry potatoes again for 5 min or until golden. Drain on paper towel. Add salt or dust with favorite seasoning.
